Move on up by Curtis Mayfield especially the extended mix has great bongos.
Tyrannosaurus Rex was bongos before Congos in T.rex

Congos and various other percussion feature well in the Santana sound too

There is OUTSTANDING BONGO WORK during the instrumental at the end of the extended version of Santana's Black Magic Woman.

In fact the whole percussion work on that track (particularly the extended version) is the best I've ever heard.
